“IImagine leaving a supermarket with four shopping bags, dropping one in the parking lot and simply not picking it up. That’s basically what we’re doing.” The statement comes from Dana Gunders, a researcher at the Natural Resources Defense Council, a non-profit environmental group based in New York. In a context where, according to the UN, a third of the world’s population faces food insecurity, wasting food is ethically wrong. However, among everything that could be food and was not, 1.05 billion tons of food products are lost every year — according to 2022 data collected by the United Nations Environment Program (UNEP). In other words, almost 40% of all food produced in the world goes to waste, with the majority of waste occurring in the last link of the food chain: the domestic context.
