It is 5:30 in the afternoon and the sun’s rays expire over the treetops and the cattails of the Hermitage of Santa Isabelhim, but few notice, because the aroma of fried omelet and roast turkey It has taken over the environment.
It is not an ordinary afternoon in the magical neighborhood. People of all ages have gathered around the park where another edition of the event is taking place. Panucho Fair.
The headquarters, the same since 2019, is not an occurrence. History says that it was there, in the Hermitage, where the panucho was born. And the neighbors replicate it with pride: “Don Ucho, he invented it.”
The chronicles also say that in its origins, the panucho was just a tortilla with beans, boiled egg and onion; but like life itself, the stew has also evolved.
In this edition, for example, in addition to egg and roast turkey, ground beef panuchos, roast beef and queso de pelota are offered.
Araceli del Socorro Chinfrom the position “Mom’s seasoning”has been preparing panuchos for more than 40 years, and although he assures that it is not complicated, he confesses that a lot has to do with the love with which one prepares it.
She was one of those who participated in the fair, which opened to the public at 5 in the afternoon.
“We are barely settling in, but, bless God, it is already moving a little,” he points out while arranging leaves of lettuce, onion and meat on the tortilla filled with strained beans. “Here we also offer cheese, minced meat, eggs and turkey.”
A few steps ahead is the “La Lupita” stand. There they serve Guadalupe Chávez Rosado and Óscar Guzmán Guzmán, They can barely manage to prepare the panuchos with black filling, roast turkey, queso de pelota, Daysi cheese, hard-boiled egg and ground beef.
Guadalupe and Óscar prepare the stew with such skill that there is no shortage of people who record them: while they place they put the finishing touches on the dish, which many places have adopted as their own.
But there is something about the Ermita panuchos, that people from other places have decided to take a look, like Mrs. Elsa May.
Elsa was a neighbor of the 66th Street (by the General Cemetery)but when he got married he moved to Vergel II.
“That’s where I come from, and today we come to enjoy the panuchos,” he says, while enjoying a turkey one.
Although they have placed chairs and tables so that people are comfortable, Mrs. Elsa and her companion prefer to eat on a bench near the kiosk, so that they can see a little of the shows that are presented on the main stage.
