In the heart of Dão, the Taboadella opens the doors of the design cellar for the first edition of “The Mushroom Edit“, a celebration of the region’s living forest, mushrooms, wines and gastronomy. Inspired by the surrounding landscape and the cycle of nature, the party takes place November 29th with several moments, mushroom picking, fire cooking worked by chefs renowned and many wines on tasting.

Taboadella

The festival offers a unique sensory experience, which combines mushroom picking, fire cooking by award-winning chefs, wine tasting and music. The setting will be the emblematic Taboadella wine cellar — designed by architect Carlos Castanheira, with a strong sustainable vocation — which will become a meeting point between nature, art and flavor.

A fire kitchen will be led by chefs André Carvalho (Quinta Nova de Nossa Senhora do Carmo), Renato Cunha (Rust) and Diogo Rocha (Lemos Table). Leading Dão wine producers and hundreds of references in tasting, always with the mushroom as an inspiring element, accompany the tastings.

The event presents two ways of experiencing the Dão — the Immersive Experience ea Main Experience —, reflecting the duality between forest and winery, between introspection and celebration, explains Taboadella in a statement.

The Immersive Experience is an exclusive, limited edition moment that invites participants to a walk through the forest guided by Taboadella mycologists, revealing the secrets of edible mushrooms. The experience culminates in a lunch at the Casa Villaethe first property in the Dão region, associated with the Relais & Châteaux chain, followed by entry into the main celebration.

The Main Experience, which takes place between 5pm and 9:30pm, will take place in the Taboadella wine cellar. Between the ground floor and the top floor, visitors will be able to taste wines, participate in commented tastings, listen to music (DJ Set) and purchase wines from the producers present. Each participant will receive a tasting glass, to toast nature with the best flavors of Dão.

Roman soul in the heart of Dão

Located in Silvã de Cima, in Sátão, in the heart of the Dão Demarcated Region, Castendo a Taboadella sub-region, it is a place with very ancient origins that still has traces of occupation and, it is believed, wine production, in Roman times. The farm stands out not only for its architecture, but also for its 27 vineyard plots with an area of 42 hectares cultivated under rainfed conditions, at altitudes between 420 and 530 meters. These vineyards, surrounded by forest between the Pereiro and Sequeiro valleys, are home to historic grape varieties such as Alfrocheiro, Jaen, Touriga Nacional and Tinta Pinheira. Later, in the plantations of the 1980s, the varieties Tinta Roriz, Encruzado, Cerceal-Branco and Bical were added, followed by Baga in 2021.

Surrounded by five mountains, including Serra da Estrela, Taboadella benefits from cooler nighttime temperatures and follows a sustainable rainfed agriculture model that perpetuates the ancestral character of the 27 plots. Grown on Paleozoic granite soils, Taboadella wines embody a unique place with a Roman soul. The soil and altitude are fundamental differentiators, allowing slow maturation and providing minerality, freshness, elegance and complexity.

In addition to the vineyards and the wine cellar, one of the most emblematic works of architecture in the region designed by architect Carlos Castanheira, the property also includes the Wine House, the starting point for discovering the Taboadella vineyard and wines, and Casa Villae, an 8-bedroom manor house, converted into a very special accommodation, unprecedented in the region and available for rent on an exclusive basis.
